Bacon, Egg, Cheese and Tomato Breakfast Bagel

Ingredients:

1 Everything bagel – or bread of your choice

2 Eggs

3 Bacon slices

¼ Cup shredded cheese

1 Tomato

1 1/2 Tablespoon butter

Black pepper to taste

Plate with paper towels to drain the bacon

Instructions:

Step 1: Make the bacon. Preheat frying pan over medium heat. Fry the bacon in single layers and don’t dump out the grease, it’s what makes it crispy. Turn the bacon as needed to keep it from burning. Raise the heat if it cooks to slow, lower the heat if it spatters and smokes too much. Never leave it unattended.

Drain the bacon on the paper towels. Let the bacon grease cool then pour it into an empty jar or can and dispose of it in a trash receptacle.

Butter the bagel and toast it in your frying pan over medium heat. Preheat another frying pan over medium heat, coat the pan with a teaspoon of butter and scramble the eggs in it. .  

Assemble the sandwich with the tomato on the bottom, then the eggs in the middle. Cover the eggs with cheese then put the bacon on top. Season with black pepper.
