Banana Pancakes with Walnut Syrup

Ingredients:

1 Box of pancake mix (and the ingredients needed to make them)

1 Egg

¾ Cup milk

1 Tablespoon vegetable oil

½ Stick butter

1 Banana

1 Small bottle of pancake syrup

½ Cup chopped walnuts

Instructions:

Step 1:

Prepare the walnut syrup

Place pan over low heat. Pour in a cup or more of syrup. Stir in walnuts and a tablespoon of butter. Warm, to not simmer the syrup. Turn the heat down if it starts to simmer.

Step 2:

Prepare the pancake mix according to the directions on the box. Some mixes are complete and don’t require an egg, milk or vegetable oil, others do. The mix used in this recipe and video requires you to stir in an egg, milk and vegetable oil but leave the mix just slightly lumpy. If you like pancakes that are light and thin, add a little extra milk, if you like them thick, add a little less.

Preheat frying pan over medium heat for a minute. Coat the bottom of the pan with butter. Add about ¼ cup of pancake mix. Add banana slices to the mix to taste.

When bubbles appear on top of the pancake and the edges are firm, carefully slide your spatula under the pancake and flip it. Depending on your stove, each side could take about four minutes to cook.

Serve pancakes with walnut syrup.
