RECIPE
Ingredients:
3 Eggs
1 Sweet Red Pepper
1 Small Onion
1 Jalapeno (is you like your food spicy)
4 Tortillas — flour or, even better, whole grain
1 Can non-fat refried beans
1/4 Cup shredded cheese (optional)
1 Teaspoon butter
Directions:
Cut off a third of the sweet red pepper and the whole jalapeno and clean out the seeds. Dice both into tiny pieces. Cut half of the onion into tiny pieces. (If you don’t like spicy jalapeno, dice another third of the sweet red pepper into the mix.) Place a cup of refried beans and the tortillas in separate pans over medium heat. Turn the tortillas frequently to allow them to heat up without burning.
Put another pan over medium heat. Add the butter and the vegetable mix. Saute the mix until the onions start to turn clear. Do not brown them. When they are sauteed, add the eggs and scramble them with the vegetables.
When the eggs are done, take them off the stove. Using tongs, remove the tortillas and place them on a plate. Spoon a strip of refried beans and the egg and vegetable mixture onto the tortilla. Sprinkle a little cheese on them and fold the tortilla over.
Congratulations! You just made a breakfast burrito. This recipe makes enough for two people to have two burritos each.
