RECIPE
Ingredients:
1 Pound of boneless skinless chicken breast
4 Slices well-toasted hearty wheat or white bread
6 Pieces crispy bacon
4 Tablespoons mayonnaise
1/4 Cup chopped red onion
3 Campari tomatoes (or one medium tomato)
1/4 Iceberg lettuce
Instructions:
Prepare the bacon using the following instructions:
Take bacon out of refrigerator and let warm to room temperature for ten minutes. Preheat non-stick skillet for five minutes over medium heat. Drip water into the pan. If the water drops ball up and roll around, the pan’s ready for the bacon.
Place individual pieces of bacon in the pan and flatten out. Let the bacon pieces cook on one side until lightly browned, then use tongs to turn them over. Repeat until the bacon is perfectly brown and crisp and there’s no uncooked fat on the strips. If the bacon fat starts to smoke too much, turn the heat down a little until it stops.
As you remove the pieces and place them on paper towels to drain off the fat, add more strips to the pan. Do not drain the fat during the cooking process. It makes very crispy and tasty bacon.
When the bacon is all cooked. Allow the fat to cool, then pour it into a can and discard it.
IMPORTANT: Leave the bacon residue in the pan. We’re going to brown the chicken in it.
Trim the chicken breast in half, then fillet the two halves so you have four pieces.
Preheat the skillet with the bacon residue over medium heat. Add the chicken pieces and brown them until they are cooked through. This takes about ten minutes.
To build the two sandwich, spread mayonnaise on the bottom pieces, sprinkle the chopped onion on them. Put the chicken on top of the onion layer then add the lettuce, sliced tomatoes and avocado pieces. Top with three pieces of bacon cross-hatched on each sandwich. Spread mayonnaise on top pieces of bread and press them down firmly on the sandwiches. Cut the sandwiches in half diagonally and they’re ready to serve.
