1 Pound boneless skinless chicken breast
½ Sweet red pepper
½ Sweet onion
1 Teaspoon black pepper
2 Tablespoons curry powder
1 Tablespoon soy sauce
2 Teaspoons sugar
2 Tablespoons vegetable oil
Wash the pepper, remove the core and seeds, then dice it. Cut the onion in thin slivers. Dice the chicken into bite-sized pieces.
Preheat your frying pan at just over medium heat. Add the vegetable oil, then stir in the chicken and vegetables. After fifteen minutes, when the chicken is starting to brown, stir in the curry, soy sauce, black pepper, and sugar. Cook for ten more minutes.
Serve on rice, in sandwiches and salads…
