Curried Chicken Sandwich Easy Recipe
For Curried Chicken:
1 Pound boneless skinless chicken breast
½ Sweet red pepper
½ Sweet onion
1 Teaspoon black pepper
2 Tablespoons curry powder
1 Tablespoon soy sauce
2 Teaspoons sugar
2 Tablespoons vegetable oil
For Sandwich:
2 Slices of bread
¼ Cup minced sweet onion
¼ Cup minced celery
1-2 Tablespoons mayonnaise
Salt and pepper to taste
Instructions:
Step 1: Make the curried chicken
Wash the pepper, remove the core and seeds, then dice it. Cut the onion in thin slivers. Dice the chicken into bite-sized pieces.
Preheat your frying pan at just over medium heat. Add the vegetable oil, then stir in the chicken and vegetables. After fifteen minutes, when the chicken is starting to brown, stir in the curry, soy sauce, black pepper, and sugar. Cook for ten more minutes. Allow to cool in a bowl.
Step 2: Make the sandwich
To make the sandwich, take about a cup of the curried chicken and mince it. Rinse off the celery and mince it and the onion. Mix chicken, veggies and mayo in a bowl and serve on bread.
