Ingredients:
1 Box pancake mix
Prepare the mix according to directions on box. Mine calls for:
1 Cup pancake mix
¾ Cup milk
1 Teaspoon vegetable oil
1 Egg
Two tablespoons butter
1 Cup rinsed whole blueberries
Instructions:
Prepare pancake mix according to directions on box. My mix calls for pancake mix, oil, milk and and one egg. (If you want thin, light pancakes, add a little more milk. Thick, heavier pancakes, add a little less milk) Stir well, but some flour lumps are ok. Carefully light stove. Let sit for a few minutes. Preheat frying pan over medium heat. Preheat for about two minutes. When you spritz water on it and the droplets sizzle, it’s ready. Coat bottom of pan with a teaspoon of butter. Pour a ½ cup of batter into the pan. Add the number of blueberries you want. When bubbles appear on the top of the pancake and the sides appear cooked solid, flip the pancake. Should take about 4 minutes. After you flip, should take 2-3 minutes for second side. It should slide easily in pan to indicate it’s ready. Serve with butter and syrup.
