1 10 ounce can of clams
1 Tablespoon olive oil
1/2 Teaspoon dried Italian seasonings
1 Can artichoke hearts (optional)
1/4 Cup minced sweet onion
2 Green onions (optional)
1 Celery stalk
2 Cloves garlic (or 1/4 teaspoon of garlic powder)
Red pepper flakes (optional)
Angel hair pasta or spaghetti
Place the following ingredients in a bowl: Rinse green onion and cut into thin slices. Rinse celery stalk, cut lengthwise then finely mince. Finely mince or crush garlic. Mince 1/4 cup of sweet onion.
Place the following in a separate bowl: Cut the leaves off the artichoke hearts and dice the artichoke hearts. Use 1/2 can or more to your taste.
Start boiling pasta water.
Preheat frying pan over just under medium heat. Add one tablespoon of olive oil then pour the onion, celery, garlic mix into it and saute until the onions start to appear translucent. Then stir in artichokes and Italian seasonings. When well mixed, pour in the clams and simmer for 3-5 minutes.
Prepare the pasta. Serve the clams and white sauce on the pasta.
