1 English muffin
1/2 Cup of Italian blend shredded cheese. You can just use mozzarella, if you prefer.
1 Teaspoon dried Italian seasonings
Dash of salt
Dash of onion powder and/or garlic powder (optional)
4 Tablespoons tomato paste
2 Thin slices of fresh tomato (optional)
(NOTE: You can also top the pizza with lightly sauté onions and peppers or minced garlic, pepperoni or fully cooked sausage. Be creative!)
Preheat oven to 400 degrees in bake setting with the rack in the center position. Toast the English muffin halves. This will ensure you make a crispy pizza. Spread 1-2 tablespoons of tomato paste on each English muffin halves. Rinse off the tomato and cut off two thin slices. Place them on top of the tomato paste. Sprinkle cheese evenly over tomatoes. Sprinkle a dash of Italian seasonings, salt and onion powder on the cheese. Cover baking pan with foil, place the pizzas on it and put it in the oven. Bake for 3-5 minutes, then decide if you want to bake it longer. If you like your cheese super sizzle, you can broil it for a minute or two. Just keep an eye on it so it doesn’t overcook.
