1 Teaspoon sugar
2 Teaspoons salt
1/2 Teaspoon black pepper
1/4 Cup white wine vinegar
1/3 Cup olive oil (if you don’t like olive oil, you can substitute a light vegetable oil)
4 Garlic cloves (can be eliminated if you don’t like garlic)
1/4 Teaspoon cumin
1/4 Cup fresh parsley
1/4 Cup fresh basil
1 Tablespoon fresh oregano
(If you can’t get fresh herbs use 1 tablespoon of dried Italian seasonings, but let them soak in the dressing so they’re tender.)
1/4-1/2 Cup water to taste
Combine the following ingredients in a small mixing bowl. First combine the dry ingredients: Sugar, salt, and black pepper. Stir in the wet ingredients: White wine vinegar, and olive oil. Squeeze in half a lime. Crush or finely mince the garlic cloves and stir them in.
Rinse the herbs and remove them from their stems. Place in food processor and pulse between chop and grind for 30 seconds until the herbs are finely minced. If you don’t have a food processor, finely mince with a knife. Stir the minced herbs into the salad dressing mix. Stir in water.
Let the dressing sit for five minutes. Using a clean spoon, taste it and see if you want to adjust the ingredients, which may vary in strength and taste, until you get it suits your preferences.
Let sit in refrigerator for another fifteen minutes to let the flavors meld.
