(This recipe is for the traditional Juevos Rancheros, which features a fried egg. There is also a scrambled egg version on StepByStepChef.com.)
1 or 2 Eggs
1/2 Cup refried beans
1/4 Cup shredded Mexican-style cheese
1/2 Cup diced fresh tomatoes
1/4 Cup minced onion
1/4 Cup minced cilantro (or 1/4 teaspoon cumin, if not available)
1/2 Minced jalapeno (optional if you like it hot)
1 Flour tortilla
1 Teaspoon butter
1/4 Teaspoon salt
Cut tomatoes into sections, clean out seeds and pulp, then dice them and put them in a bowl. Mince 1/4 cup onion and 1/4 cup cilantro and add to bowl. Remove core and seeds from jalapeno and mince half of it and add to bowl. Add 1/4 teaspoon salt and stir ingredients until uniform.
Over just under medium heat, warm the refried beans, stirring occasionally to prevent scorching. Over just under medium heat, lightly brown tortilla. Don’t make it too crispy to cut with a knife.
Place small frying pan over medium heat. Melt teaspoon of butter to coat pan, then crack egg in pan. Fry egg sunnyside up until white is solid, but yolk is still runny.
Build the juevos rancheros by placing tortilla on plate. Cover the tortilla with refried beans then sprinkle shredded cheese on them. Place egg on top then cover with pico de gallo.
