Easy Pasta Salad with Vegetables



12 Ounce box of pasta — bowties, shells or rotini

1/2 Cup Caesar salad dressing

3/4 Cup mayonnaise

1/2 Sweet red pepper

1 Head broccoli

1 Cucumber

1/2 Red onion

3 Celery stalks

2 Carrots

1 Jalapeno (optional for those who like it spicy hot)

1 Tablespoon vegetable oil


Prepare the pasta of your choice according to the recipe on the box. When it’s done, rinse in cold water until chilled, then drain out the water. Mix in a tablespoon of vegetable oil to keep the pasta from sticking together and set in refrigerator.

Cut the vegetables in small bite-sized pieces and place in a large bowl. Tips: Peel the cucumber before chopping. Remove the core and seeds from the red pepper. Cut the broccoli into bite-sized florets. Wear a glove when cutting the jalapeno to keep from burning your fingers or cut with a knife and fork.

When the vegetables are all cut and in the bowl, stir in the Caesar salad dressing and mayonnaise. Then stir in the pasta. If you want, add salt and pepper to taste.
