Easy Puerto Rican Style Vegetarian Beans



2 15 Ounce cans of small red beans

2 Tablespoons tomato paste

1/4 Cup sweet onion

1/4 Cup sweet red pepper

7 Garlic cloves

2 Tablespoons canola oil

1 Teaspoon salt


Remove the core and seeds from the sweet red pepper then finely chop it. Finely chop sweet red pepper. Crush or finely mince garlic. Mince cilantro.

Preheat large sauce pan over medium heat. add oil. Then quick saute vegetable mix until onions appear translucent. Stir in beans, tomato paste and salt.

Simmer for 25 minutes.
