RECIPE
Ingredients:
1 1/2-2 Pounds of cod, haddock, flounder or tilapia
1 Tablespoon minced oregano
1 1/2 Tablespoon minced rosemary
2-3 Tablespoons minced parsley
2 Tablespoons butter
1/2 Lime
Canola oil spray
Instructions:
Preheat oven at 400 degrees.
Mince oregano, rosemary and parsley, being careful to remove tough stem pieces.
Preheat small frying pan at just under medium heat. Coat pan with two tablespoons of butter. Stir in herbs and squeeze in 1/2 lime. Lightly saute for 1 1/2 minutes.
Coat baking pan with canola oil spray. Place fish filets in the pan. Cover with herb mix.
Bake fish for 12 to 20 minutes. Very thin filets will take 12-15 minutes. Medium thick filets will take 15-17 minutes. Thick filets will take 17-20 minutes.
Fish is done when it if flaky but still moist, not dry.
