RECIPE
Ingredients:
1 Pound medium tail on (or off) shrimp
32 Ounce Chicken Broth
1/2 Cup chopped sweet red pepper
1/2 Cup minced sweet onion
1/2 Cup minced parsley
5 Green onions
1 Red chili pepper (optional)
4 Cloves garlic (or to taste)
1/4 Cup olive oil
2 1/2 Tablespoons butter
1 Teaspoon salt
Instructions:
Mince sweet onion and red chili pepper and chop sweet red pepper and put in a container. Slice green onion roots off and discard then slice green onion into 1/8 inch segments. Put solid white and green segments in container. Put hollow green onion tube segments in a separate container.
Mince parsley and put in container with hollow green onion tube segments.
Crush or mince garlic cloves and put in a small bowl.
Preheat frying pan at just under medium heat. Add 1/4 cup of olive oil and add all the vegetables in the sweet onion container. Lightly saute them for about two minutes. Once they begin to appear translucent, stir in shrimp. When they start to appear pink — about five minutes — add butter and let it melt into the mix.
Add parsley, green onion tubes and garlic. Cook another two minutes.
Pour in broth. Bring to a slow simmer — takes 5-10 minutes. Once it reaches slow simmer, remove from heat and serve.
