2 Medium zucchinis
8 Campari Tomatoes (Or 1 large tomato cut into large chunks)
1 Sweet onion (yellow and red are ok, too)
1/2 Tablespoon salt
1/2 Tablespoon Italian seasonings
1/2 Tablespoon red pepper flakes (optional, if you like it spicy hot)
Rinse vegetables. Place the following in a bowl: Whole Campari tomatoes, zucchinis cut into bite sized chunks, and the onion cut into thick slices. Stir in vegetable oil and salt.
Follow manufacturer’s instructions to start and preheat your grill to about 500 degrees. Carefully, place a non-stick grilling pan on the grill surface and spread vegetables out on it.
