1/2 Cup cubed ham steak
1/4 Cup diced red pepper or green bell pepper
1/4 Cup diced onion
1 Jalapeno diced (optional for those who like it hot and spicy)
1/2 Cup shredded cheese
1 Cup refried beans
1 Teaspoon butter
Cut the ham steak into small cubes. Dice the red pepper or green bell pepper, onion and jalapeno.
Toast the tortilla in a pan preheated over medium heat.
Coat a frying pan preheated over medium heat with the teaspoon of butter. Put the ham and vegetables in the pan and saute until the onions appear translucent. Do not brown.
Crack the four eggs into the ham and vegetable mix and scramble them together. Keep scrambling for 3-5 minutes — until the egg appears dry.
Heat the refried beans in your microwave or on the stove.
Put the toasted tortilla on a plate. Fill half with the ham and egg mixture. Add a strip of refried beans and sprinkle with cheese.
(You can also add hot sauce or salsa at this point, but taste the burrito first to see if it’s needed.)
