Herbed Chicken Breasts



4 Boneless skinless chicken breasts

1/4 Cup finely chopped parsley

2 Tablespoons finely chopped rosemary

2 Tablespoons finely chopped oregano

2 Garlic cloves crushed or minced

1/4 Cup olive oil

1 Teaspoon salt

Non-stick canola spray


Preheat oven to 350 degrees with oven rack in top slot.

Finely chop 1/4 cup parsley, 2 tablespoons rosemary and 2 tablespoons oregano. Do not put thick or woody stems in the mix. Crush or mince 2 garlic cloves.

Mix the herbs and garlic with the olive oil and 1 teaspoon of salt.

Spray your baking pan with non-stick canola oil. Place the chicken breasts in the pan in a single layer. Cover the tops of the chicken breasts with the herb and garlic mix.

Place the pan in the oven and bake for 35 minutes.
