Plant-based Spicy Sausage with Onion and Pepper Pasta Sauce
¾ Cup plant-based spicy ground sausage
½ Green bell pepper
¾ Small onion
1 Clove garlic
1 Teaspoon dried Italian seasonings
1 Large can crushed tomatoes
1 Tablespoon olive oil
1 Package of the pasta of your choice
Parmesan cheese to taste
Place the following ingredients in a high-sided skillet or medium sauce pan: Rinse, core, seed and mince the green bell pepper, and peel the onion and mince ¾ of it. Peel the garlic and mince or crush it onto a small bowl.
Stir in the olive oil and place the skillet over medium heat. Saute the vegetables, stirring them frequently.
Start preparing the pasta of your choice according to the directions on the package.
When the onions start to appear translucent, stir in the dried Italian seasonings, garlic and plant-based spicy sausage. Cook until the sausage is browned, this should take about five minutes.
When the plant-based spicy sausage is browned, not gooey, stir in the crushed tomatoes. Cover the pan, turn the heat down to low, and bring to a simmer. When it’s simmering, carefully remove the cover and spoon onto your pasta.
