How to Make a Crisp Summer Salad Recipe

Crispy & Spicy Summer Salad


3 Celery stalks

2 Carrots

1 Jalapeno (optional)

1 English cucumber or 1 large American cucumber

2/3 Tomato

¼ Cup minced red onion (sweet, yellow or white are ok, too)

4 Garlic cloves (optional for garlic lovers, others can substitute 2 teaspoons dried Italian seasonings)

1 Tablespoons sugar

1 Teaspoon salt

1 Teaspoon black pepper

1/4 Cup white wine or regular vinegar

¼ Cup olive oil

1/3 Cup water


Rinse all vegetables. Cut celery stalks in half lengthwise, then cut into thin slices. Place ingredients in container as you prepare them. Thin slice carrots. Slice the cucumber in half lengthwise, then cut it in half lengthwise. Slice into quarter inch thick pieces. Dice the onion until you have ¼ cup. Cut the jalapeno lengthwise, remove seeds, cut into slivers and then mince. Stir the hardy vegetables together. Dice the tomato.

Remove the skin from the garlic and mince it and place it in a bowl. Stir in vinegar, olive oil, sugar, black pepper, salt. Taste and adjust to your taste. Stir the dressing into the salad and serve.
