Ingredients:
2 Eggs
½ Teaspoon water
2 Tablespoons butter
4 Mushrooms
¼ Cup red onion (sweet, yellow and white are fine, too)
½ Cup diced ham
¼ Cup cheese
Salt and pepper to taste
Bread of your choice for toast
Instructions:
Rinse off vegetables. Slice then dice mushrooms. Mince the onion. Dice the ham. Crack the eggs into a bowl and scramble them with a ½ teaspoon of water to help them fluff up a bit.
Read the instructions on how to operate your propane stove. If gas builds up while you’re trying to light it, let the gas dissipate, then try again.
Preheat frying pan for a minute. Coat the bottom of the pan with butter. Saute the mushrooms, onions and ham. When the onions start to appear translucent and the mushrooms are golden brown, stir in the egg mixture and scramble until the egg is solid, not runny. When scramble is about done, make toast in another pan.
