Plant-based Chicken Salad with Dill Sandwich
1 8 Ounce Package of Plant-based Chicken Pieces or Morsels
1 Celery stalk
¼ Cup minced red onion (yellow and white are ok, too)
3 Tablespoons minced fresh dill (one teaspoon dried dill seasoning is ok, too)
3 Tablespoons of mayonnaise (add us little or as much as you like)
1 Sub roll or the bread of your choice
Combine the following in a bowl: Rinse off the dill, remove the sprigs and mince it. Rinse off the celery and mince it. Peel the onion and mince ¼ cup.
Cook the plant-based chicken morsels according to the directions on the package of the brand you bought. Let the chicken cool, then dice it. Put the plant-based chicken in with the vegetables and dill. Stir in the mayonnaise and salt to taste.
Spoon the plant-based chicken salad and dill onto the bread of your choice.
