RECIPE:
Plant-Based Sausage Breakfast Burrito
Ingredients:
1/3 Cup plant-based ground sausage
2 Eggs
¼ Cup minced red onion (other types are fine, too)
¼ Cup minced sweet red pepper (green is fine, too)
1 Tablespoon butter
¼ Cup shredded cheese
1/3 Cup refried beans
2 Flour tortillas
Instructions:
Rinse off the red pepper. Remove the core and seeds and mince ¼ cup. Peel the onion and mince ¼ cup. Scramble the eggs.
Preheat your regular frying pan over 1/4 heat. Coat the bottom of the pan with butter. Lightly saute the vegetables and brown and crumble the plant-based sausage according to the instructions on the package of the version you purchase. Warm up the refried beans, too. (You can warm up the refried beans separately in your microwave if you wish.)
When the vegetables are sauteed and the sausage is browned stir them together then scramble the eggs into them. At this point, begin warming your tortillas in a separate pan over ¼ heat.
Once the egg is dry, build your burrito by placing the egg, plant-based sausage and veggie mix on half of the warm tortilla and beans on the other. Sprinkle cheese on the top and fold the tortilla into a burrito. You can also add a hot sauce or salsa of your choice.
