2 Eggs
1/3 Cup sausage
¼ Cup minced sweet onion
¼ Cup minced sweet red pepper
¼ Cup shredded cheese
1 Teaspoon butter
Instructions:
Rinse off the pepper. Remove the core and seeds then mince it until you have ¼ cup. Peel the onion and mince ¼ cup.
Crack the eggs into a bowl, add a ½ teaspoon of water to fluff them up, and whisk them in the bowl.
Preheat your small frying pan for a minute over medium heat. Brown the sausage and break it up as you go until fully cooked. This takes around 10 minutes, depending on your stove. At this point, stir in the pepper and onion until sauteed – the onion starts to appear translucent. Remove the sausage and veggie mix and put in a bowl.
Turn the heat down to just under medium. Coat the bottom of the pan with butter. Pour in the egg mixture. When the clear or dark windows in the egg turn white or yellow – takes a minute or two – spoon the sausage and vegetable mix on one half of the egg mix and the cheese on the other half. Cover for a minute or two. When the cheese is melted and the egg is solid, not wet and runny, flip the cheese side over on the sausage and vegetable side.
