Ingredients:
1 Large, fresh cauliflower
1/4 Cup light vegetable oil
1 Teaspoon salt
1 Teaspoon cumin
2 Tablespoons yellow curry powder
1-2 Tablespoons light brown sugar (to your taste)
1 Teaspoon garam masala (optional, adds spicy heat)
Instructions:
Preheat oven, 350 degrees, center rack.
Combine dry ingredients — salt, cumin, curry powder, light brown sugar, and garam masala — in a bowl and mix with a spoon. Sample the dry mix to see if it tastes the way you like it. If not, adjust the flavor by adding more of any of the ingredients until it meets your approval.
Rinse and trim the cauliflower, making sure to scrub off or cut out any brown sections. Cut the cauliflower into 1/2 inch thick slices and small florets. Place in a bowl. Stir in vegetable oil.
Pour cauliflower onto a foil-lined baking sheet and spread out evenly. Spoon sprinkle spice mix evenly on top of cauliflower.
Place in oven on middle rack. Roast for 20 minutes. Turn cauliflower over. Roast another 15-20 minutes. Cauliflower is done when it’s roasted firm, not raw-crunchy.
