RECIPE
Ingredients:
2 1/2 -3 Pounds chicken
2 Tablespoons yellow curry
1 Teaspoon cumin
1 Teaspoon of masala
1/2 Teaspoon onion powder
1/2 Teaspoon salt
2 Tablespoons vegetable oil
1 Tablespoons light brown sugar
Instructions:
Preheat oven to 350 degrees with a rack in the middle position.
Rinse chicken, pat dry. Place in bowl. Coat with vegetable oil. Then place in glass or metal baking pan. (If metal, you might want to line it with foil for ease of cleaning.)
Mix up spice rub by placing the following ingredients in a small bowl and stirring until uniform: yellow curry, cumin, masala, onion powder, salt, and light brown sugar. Mix it together with a spoon, then taste the mix. If you like it sweeter add more light brown sugar, saltier, add salt. Or increase any other ingredient you like to get it just right.
Spread spice mix over chicken. Place in oven and bake for 40-45 minutes. Use a meat thermometer or cut into chicken to make sure it’s cooked through. You don’t want to see any pink chicken meat.
