2 lbs lean hamburger

2 pieces toasted whole wheat bread

1 onion (3/4 cups chopped)

1 green or red pepper (3/4 cups chopped)

2 eggs

4 cloves garlic

1 teaspoon Italian seasoning mix

1 teaspoon black pepper

Canola oil non-stick spray


Preheat your oven to 375 degrees.

Take the bread and either break it up into tiny pieces or run it through your food processor to make breadcrumbs and put them in a bowl.  Chop the onion and pepper and add them to the bowl.  Crack the two eggs into the mix.  Crush or finely mince the four cloves of garlic.  Add the Italian seasoning mix and black pepper.  Knead the mix and hamburger to an even consistency.

Spray your loaf pan with canola oil non-stick spray and put the meatloaf mix into it.  Put the meatloaf into the oven for 50 minutes.  If the top starts to blacken, carefully place an aluminum foil cover over it while it cooks.

Remove from the oven.  To reduce the fat content of the meatloaf even further, carefully tip it and drain the excess fat into an empty can.
