1 Teaspoon butter
2 Baby bella mushrooms (white mushrooms are fine, too)
1/8-1/4 Cup minced red onion (yellow, sweet or white onion are ok)
1/8 Teaspoon red pepper flakes (optional)
Whisk eggs in a bowl. Dice the mushrooms. Mince the red onion until you have 1/8-1/4 cup.
Preheat small frying pan over medium heat. Add mushrooms and saute until the pieces start to appear translucent at the surface. Stir in the minced onion until they turn translucent.
Add egg mixture to pan and scramble with mushrooms and onions until the eggs. Add optional red pepper flakes. The mushroom and onion egg scramble is finished when the egg mixture has a dry consistency.
