Spinach, Mushrooms and Tomatoes Power Dish

1 Regular-sized bag of spinach

1 Small container of mushrooms

½ Tomato

2 Tablespoons olive oil

Salt to taste


Rinse the vegetables. Dice the tomatoes and mushrooms and put them into a frying pan. Stir in a tablespoon of olive oil. Saute over medium heat for about fifteen minutes, stirring frequently, until the mushrooms are browned. Store the mix in a bowl.

Preheat the pan just over medium heat add a tablespoon of olive oil and saute the spinach, stirring frequently. Should take ten to fifteen minutes.

Stir in the mushroom and tomatoes mix and a little salt to the spinach. Warm and serve.
