½ Pound ground beef burger
¼ Cup minced sweet red pepper
¼ Cup minced sweet onion (yellow, white and red onion are fine, too)
1/8 Cup minced jalapeno (optional for those who like it hot)
1 Tablespoon butter
2 Hamburger buns
¼ Cup shredded cheese or 2 cheese slices
Salt and Pepper to taste
Rinse the red pepper and jalapeno, remove the seeds and core from them, then mince them. Wear a glove or use a knife and fork to mince the jalapeno to prevent burning your skin or eyes. Peel and mince the onion. Mix the vegetables into the burger.
Preheat frying pan over medium heat. Coat the bottom of the pan with butter. Cook the burger for five minutes on one side. When the juices run clear, flip it and cook the other side for five minutes – until the juices run clear. If you want it well done, flip it and cook for another five minutes. (Cooking times will vary with the thickness of the burgers and the type of stove you’re using.) Toast the buns in the leftover butter and drippings in the pan. Top with cheese and salt and pepper to taste.
