RECIPE
Ingredients:
1 1/2 Pounds salmon, fresh or frozen from a reputable seller is okay — just make sure to fully defrost frozen filets before cooking
1 Lime (lemon is okay, too)
3 Tablespoons butter
Black pepper
Canola oil non-stick spray
Instructions:
Place oven rack in middle position and preheat oven fully to 400 degrees before baking. A hot oven makes a huge difference when cooking fish.
Melt butter over 1/4 heat, don’t let it sizzle or carmelize. Squeeze half the lime into the butter and stir it in. Spray canola oil non-stick spray in glass baking dish. Place filets in dish. Cover with butter and lime mix and season with black pepper to taste.
Put in oven and bake for 20 minutes. (If filets are thin, check that they’re cooked through at 15 minutes. If very thick, they may need a few more minutes.)
Remove from oven and put on plates. Spoon butter sauce on top of filets.
