Plant-based Chicken & Vegetable Stir Fry

Ingredients:

1/2 Cup soy sauce

1-2 Tablespoons corn starch (to thicken the sauce)

1 Tablespoon light brown sugar

1 Teaspoon sesame oil

1 Cup chicken broth

½ Sweet red pepper

3 Celery stalks

2 Green onions

1 Medium sweet onion (yellow or white onion are fine, too)

2 Inches of fresh ginger (1/2 teaspoon of ginger powder is fine)

1 Package of plant-based chicken strips or pieces

3 Tablespoons of canola or vegetable oil

2 Cups (or one package) of fresh bean sprouts (if you can find them or substitute broccoli or some other vegetable you like)

Lo Mein Noodles or Rice

Instructions:

Mix the sauce in a medium sized bowl: Stir together the corn starch, chicken broth, soy sauce, sesame oil, and brown sugar.

Rinse the sweet red pepper, remove the core and seeds and dice it. Rinse the celery and green onion and slice them into small pieces. Peel the sweet onion and cut it into thin slices. Peel the ginger and finely mince or grate it. You can also set aside 1 teaspoon of fresh ginger to add to the plant-based chicken when you’re browning it.

Start heating the water for your noodles or rice so you can prepare them according to the directions and time them out to be ready when the stir fry is done.

Preheat a large pot (or wok if you have one) over medium heat. Add canola oil and stir fry the plant-based chicken according to the directions on the package. If you’re using chicken strips, break them into bite-sized morsels. At the end of the cooking process stir in the extra ginger and 1 tablespoon of soy sauce. Set the chicken aside in a bowl.

Put the pot back on the burner set at medium heat and add 1 tablespoon of vegetable oil and stir in vegetables. Stir fry them until the onions start to appear translucent. You want the vegetables to still have a little crunch. This should take 5-7 minutes.

Stir the chicken into the vegetables for two minutes, then stir in the sauce. If you want more sauce, add more chicken broth and any other sauce ingredients you like. Warm it to serving temperature and finish preparing the noodles or rice according to the directions on the package.
