RECIPE
Important Note: Before you follow this recipe, you must steam the mussels and save the broth from my “Mussels with White Wine Optional Sauce” easy recipe. There is a printable recipe and an easy StepByStepChef.com video that will help you complete this initial step which produces the mussels and broth you’ll need to make this Mussels and Pasta Sauce recipe.
Ingredients:
1 1/2-2 Pounds steamed mussels in the shell
3 Cups of mussel broth strained to remove any broken shells
1 Celery stalk
1/4 Cup minced red onion
4 Garlic cloves
4 Tablespoons butter
1 Teaspoon salt
2 Tablespoons extra virgin olive oil
The pasta of your choice — I prefer angel hair pasta for this dish
Instructions:
Pick mussels from shells and place in a bowl. Put in refrigerator after you’re done picking.
Place the following in a small frying pan: Slice celery stalk in half lengthwise then slice into thin pieces. Finely mince red onion. Remove leaves from parsley and mince. Crush or finely mince garlic. Add olive oil, butter and salt.
Start preparing your pasta according to the instructions on the packaging.
Over medium heat, saute the vegetables until the onions begin to appear translucent (slightly clear). At this point remove them from the stove.
Heat the mussel broth over high heat until it reaches a slow boil. Stir the vegetables into the broth and add the mussels. Immediately remove the broth pan from the heat. Serve over the pasta of your choice.
