1 1/2 Pounds steak — we’re using a beef round top round in this video
1 Tablespoon vegetable oil
1 Tablespoon Butter
1 Serrano pepper (for those who like their tacos spicy-hot)
1/2 Sweet red pepper (green is ok, too)
1 Small sweet onion (yellow, white or red are ok, too)
2 Garlic cloves
Seasoning Mix Ingredients:
1 Teaspoon sugar
1 Teaspoon regular chili powder
1 Teaspoon chipotle chili powder
1 Teaspoon coriander
1 Teaspoon cumin
1 Teaspoon salt
Wash and prepare vegetables. Place the following in a bowl: Wearing a glove, remove the core and seeds from the jalapeno and serrano peppers and mince them. Remove the core and seeds from the red pepper and mince it. Mince the onion.
Chop the steak into bite-sized pieces.
Crush or mince the garlic cloves.
Mix dry seasonings listed above in a bowl. Taste and decide if you want to adjust the ratio or add another seasoning to the mix.
Preheat a deep skillet over just over medium heat. Add oil and butter and add steak. Brown steak with spice mix for five minutes. Stir in the vegetable mix and saute with the steak for another five minutes, stirring occasionally. Stir in garlic and cook for five to ten minutes until all the liquid is grilled into the meat.
Preheat small frying pan over medium heat. Add a teaspoon of oil and place a tortilla in the pan. Toast the tortilla until it is lightly browned and still bendable so you can form a taco shell.
Serve grilled steak in the taco shell.
