Scallops in White Pasta Sauce

RECIPE

Ingredients:

2 Heaping cups bay scallops (or chopped sea scallops)

32 Ounce chicken broth (or use the Step By Step Chef homemade broth recipe)

1/4 Cup minced sweet onion (yellow onion is fine)

2 Green onions minced

2 Celery stalks sliced thin

1 Tablespoon parsley minced

1 Tablespoon parsley minced

4 Garlic cloves (optional)

3 Tablespoons butter

2 Tablespoons olive oil

1 Teaspoon salt

Angel hair pasta prepared according to directions on box

Grated Parmesan cheese

Instructions:

Thin slice celery and mince sweet onion and place in a medium sized bowl. Slice green onion into small pieces and mince parsley and oregano. Add to bowl. Crush or mince garlic into the bowl.

Start preparing pasta.

Preheat skillet on just under medium heat. Melt butter and add olive oil. Add vegetable mix and saute about 3 minutes until the onions start to appear translucent.

Add tablespoon of salt and pour in broth. Raise heat to just under high and bring to a slow simmer. Add scallops. Return to slow simmer. Lower heat to just under medium and slow simmer for five minutes. Remove from heat.

Serve over pasta and salt to taste. Grated parmesan cheese tastes great on this dish, too!
