Ingredients (for two sandwiches):
12 Medium shrimp (precooked or boil for two minutes, details below)
1/4 Cup minced red onion
4 Pieces hearty whole wheat toast
2-3 Tablespoons mayonnaise
1 Garlic clove
1/8 Teaspoon salt
1/8 Teaspoon black pepper
2 Tablespoons minced cilantro
If shrimp are frozen, defrost in warm water. If raw, bring a pan of water to a boil over medium heat. Carefully put shrimp in hot water and boil for two minutes until cooked through. Remove from heat, rinse with cold water and remove all shell and tail parts. Cut into small pieces and put in bowl.
Add the following to the bowl: Rinsed and minced cilantro, minced red onion, 1/2 lime squeezed, crushed garlic clove, salt, pepper and mayonnaise. Use a spoon to gently mix the ingredients.
Peel the avocado, remove the nut and cut remaining avocado into thin slices.
Put the shrimp mix on the pieces of bread. Add avocado slices. Top with other slice of bread, and serve.
