Shrimp, Asparagus & Cheese Omelette

Ingredients:

4 Eggs

4 Medium uncooked, deveined, tail-on shrimps

1/2 Cup asparagus

1/4 Cup onion (sweet onion, if available)

1/2 Cup shredded cheese

1 Teaspoon Butter

Directions:

Fill a small sauce pan and large frying pan half full of water and bring to a boil.  Cut the top 1/3 off the fresh asparagus stalks. Add the shrimp to the small sauce pan and boil until it turns pink — 2-4 minutes. Add asparagus to large frying pan and boil for 10 minutes until it is soft but not squishy.

Remove the shrimp from the pan. Peel off the shells and cut into small pieces.

Remove the asparagus from the pan and slice into quarter-inch long pieces.

Finely cut the onion until you have 1/4 cup.

Crack 4 eggs into bowl, add 1/2 tablespoon water and beat.

Preheat large frying pan just under medium heat. Coat bottom of pan with 1 tablespoon of butter.

Add egg mixture to frying pan. Look through clear egg windows. When the bottom appears yellow or white, the egg bottom is solid enough to add the other ingredients. Add shrimp, asparagus and onion mixture to one half of the omelette. Add cheese to the other half of the omelette.

Cover frying pan and check every two minutes. When the cheese is melted and the egg mixture appears solid — this could take 5 to 10 minutes — fold the cheese half over the shrimp, asparagus and onion side.
