Shrimp Spicy Hot




1 Pound medium, tails on shrimp

7 Green onions

2 Jalapenos

1 Red chili pepper (Use another jalapeno if not available.)

3 Cloves garlic

2 1/2 Tablespoons canola oil

1 French bread of baguette


Cut off and discard rooty end of green onion. Slice onion into 1/8 inch length pieces being careful to separate solid white and light green stalk section from hollow, dark green section.

Mince jalapeno and red chili pepper. Crush garlic.

Preheat frying pan over medium heat. Add 2 tablespoons canola oil. Saute shrimp for 3 minute or until it turns pink. Remove shrimp from pan and drain off excess liquid.

Put pan back on stove over medium heat. Add 1/2 tablespoon canola oil, jalapeno, red chili pepper and solid green onion pieces and saute.

When the onion pieces begin to turn translucent, stir in the shrimp and cook for two minutes. At this point, add hollow green onion pieces and cook for one minute. Then add garlic and cook for one minute. Stir frequently to keep the garlic from carmelizing or burning.

Serve with bread.
