Spinach Bolognese (tomato with meat sauce) Spaghetti Sauce

Ingredients:

½ Pound hamburger

1 28 ounce can crushed tomatoes

1 Small can tomato paste

1 Teaspoon dried Italian seasonings

1 Tablespoon extra virgin olive oil

1 Bag baby spinach

¼ Cup minced red onion

2 Garlic cloves

Grated cheese at table

1 Teaspoon salt

1 Box angel hair or other quick to prepare pasta

Water to cook the spaghetti in

Instructions:

Mince the ¼ cup of onion. Peel and mince the garlic cloves. If you have baby spinach, you can use it as-is. If you have large-leaf spinach, you’ll need to chop it up.

Heat the spaghetti water over high heat. Preheat your sauce pan over medium heat for about a minute. Add olive oil and brown the burger, breaking it up as you go.

When the burger is browned, stir in the Italian seasonings and salt. Stir in onions and garlic and let them saute for five minutes. Gradually stir in the spinach and allow it to wilt down. When it does, stir in the crushed tomatoes and tomato paste. Cover the pan and simmer for 15 minutes stirring frequently. Time the spaghetti to finish cooking at the same time.
