3 Medium yellow squashes
3 Medium zucchini squashes
1/2 Cup sweet onion (Yellow onion is ok, too.)
2 Red chili peppers (Optional. If not available, substitute 1/2 tablespoon red pepper flakes)
1/2 Cup fresh parsley (If not available, substitute 1 Tablespoon dried Italian seasoning.)
4 Cloves garlic
4 Tablespoons olive oil
1/2 Teaspoon salt
Add 4 tablespoons olive oil to deep frying pan. Slice yellow squash and zucchini squash into 1/8 inch thick pieces. Chop onion and red chili pepper.
Put vegetables in pan and place over medium heat. (Remember, the point here is to saute, not fry the vegetables.)
Stir the vegetables frequently as they saute and turn translucent.
Crush the garlic cloves and mince the parsley.
After about 15 minutes, the vegetables should be sauteed. The squash pieces and onion should be translucent. At this point, stir in parsley, garlic and salt.
Stir for five more minutes.
