Thai Mango Salad


(NOTE: This is a spicy hot dish!)


2 Ripe mangoes (Feels firm with a little give, not mushy.)

1 Jalapeno (Less if you don’t like hot, spicy food, more if you do.)

1/2 Cup finely sliced red onion

1/3 Cup peanuts (Dry roasted or otherwise.)

4 Tablespoons seasoned rice vinegar

1 Tablespoon sugar

2 Tablespoons fish sauce


In a large mixing bowl, stir sugar, fish sauce and rice vinegar together.

Cut mango into cubes and place in bowl. (This can be challenging the first couple of times. View the Thai Mango Salad video by clicking the link above to see how to cube a mango.)

Thin slice the red onion and cut into 1 inch or less segments until you have 1/2 cup and place in bowl. Remove seeds and core from jalapeno then mince it and add it to the bowl.

Stir in the peanuts until all the ingredients are well blended.
