RECIPE
Ingredients:
6 Tomatoes
1 Cup fresh basil leaves
4 Cloves garlic (this can be left out)
2 Tablespoons extra virgin olive oil
1 Box whole grain pasta.
Optional Seasoned Chicken
¾ Pound chicken breast
1 Teaspoon extra virgin olive oil
¼ Teaspoon dried Italian seasonings mix
DIRECTIONS:
Cut six tomatoes in half horizontally. Remove the seeds and pulp. Cut tomatoes into ¼ inch pieces. Crush four garlic cloves into the chopped tomatoes. Gently stir in two tablespoons of olive oil. Remove basil leaves from stems. Chop leaves into half inch pieces. Stir into tomatoes.
Heat water for pasta according to instructions on box.
Cut the chicken into small pieces. Preheat pan on medium heat. Put 1 teaspoon of olive oil in pan. Add chicken. Stir fry chicken for 10-15 minutes until completely cooked. Add ¼ teaspoon of dried Italian seasonings mix. Stir fry for another minute. Remove from heat.
Preheat pan between low to quarter heat. Add tomato basil pasta mix to pan. Gently sauté for a minute or two until the mix just starts to steam. Stir in chicken.
Serve on pasta.
